What are the different types of layout for a restaurant kitchen design?

There is a range of layout types available for a restaurant kitchen, so it’s important to consider which is best for your operation. This can include:

  • Assembly Line: This is an efficient layout popular in QSR. A meal is prepared across an assembly line, with workers positioned at each point, each with a specific role in creating the final product. 
  • Island Layout: A kitchen arranged around a central hub. The central island is used for cooking, while prep areas, storage and washing areas are placed around the outside. 
  • Galley Layout: Ideal for optimising limited space, this layout arranges workstations along narrow walls with an aisle in between.
  • Open Kitchen: Here, the kitchen and cooking are visible to restaurant customers, bringing an interactive element.
  • Zone Layout: The kitchen is divided into separate areas, each for a specific type of dish or activity.

How often should a restaurant kitchen be cleaned?

Surfaces, floors, and equipment in commercial kitchens should be cleaned daily, while items such as fryers and ventilation hoods should be cleaned weekly. Deep cleans should then be performed quarterly (every three months).
